Recipe - Chicken Salad Makeover

2 cup Cooked chicken breasts;
minced
1 One half cup Seedless grapes
1 md Apple; cored and cut or sliced up
One half cup Raisins
One half cup Diced celery
One half teaspoon Dried tarragon; crushed
Salt and pepper; to taste
2 tablespoon Lowfat mayonnaise; *see note
2 tablespoon Yogurt; *see note
One fourth cup Chopped parsley
Lettuce leaves
Thyme sprigs; optional
Combine all ingredients except lettuce and thyme mix well. Sense chicken
salad on lettuce leaves. Garnish with thyrne, if desired. Makes 4 to 6
servings
Nutritional Analysis Per Serving: 180 Cal., 15 g pro., 6 g fat (28% Cal.
from fat), 19 g carb., 45 mg chol., 2 g fiber and 57 mg sodium.
