Recipe - Chicken Rice Salad

1 pack Uncle Ben's Fast Cooking
Rice Pilaf
2 qt Water
2 qt Cooked chicken, minced
1 qt Mayonnaise
One fourth cup Lemon juice
2 cup Green peppers, chopped
2 cup Tomatoes, fresh, chopped
1. Combine rice, contents of seasoning packet and water in cooking pan. 2.
Bring to a vigours boil. Reduce heat, cover and simmer until water is
absorbed, about 5 minutes. 3. Cool slightly. 4. Add minced chicken. 5.
Combine mayonnaise and lemon juice. Stir into rice. 6. Cover and chill. 7.
Fold in green peppers and remaining ingredients just prior to serving.
