Recipe - Chicken Marengo

2 One half pound Chicken
1 teaspoon Salt
1 ds Pepper
4 tablespoon Olive oil
1 Onion, chopped
One half Garlic clove, minced
One half cup Tomatoes, chopped
One fourth cup Sherry
2 tablespoon Flour
Cut chicken into pieces; Sprinkle with salt, pepper and flour and brown in
oil. Set aside. Saute' onions and garlic in same pan. Add chicken and rest
of ingredients, cover and simmer until tender (3040 minutes). White wine
can be used for sherry.
