Recipe - Chicken Kapama Style

3 pound Chicken (up to 4)
4 tablespoon Butter
1 lg Onion; chopped
2 Cloves garlic; minced
One half cup White wine
1 Inch cinnamon stick
One fourth teaspoon Sugar
1 Bay leaf
1 cn (16 oz) whole tomatoes;
chopped
2 tablespoon Tomato paste; OR
1 cn (8 oz) tomato sauce
Salt and pepper
Cut chicken into serving size pieces; wash and towel dry. In a heavy
saucepan melt butter; brown chicken pieces. Remove to a plate and set
aside. Over Medium heat, add onion and garlic to saucepan and brown
lightly. Add remaining ingredients and simmer for 1 minutes. Return
chicken to pan an simmer for 45 minutes or until chicken is tender. Remove
bay leaf and cinnamon stick. Serve with spaghetti or macaroni and grated
