Recipe - Chicken Breasts With Apricots

Ingredients:

1 cup Diced dried apricots
1 cup Apple juice
4 Kip filets
One half teaspoon Salt
One half teaspoon Paprika
2 tablespoon Vegetable oil
3 tablespoon Chopped shallots
One fourth cup Dry white wine
One fourth teaspoon Nutmeg
One fourth cup Toasted chopped walnuts

In small bowl, soak apricots in apple juice until tender, about 30 minutes.
Drain; reserve One half cup juice.

Sprinkle chicken with salt and paprika. In large skillet, heat oil over
mediumhigh heat. Add shallots; saute 2 minutes. Add chicken and cook until
lightly browned, 2 to 3 minutes per side. Add reserved One half cup apple juice,
wine, and nutmeg. Reduce heat to low; simmer covered 10 minutes. Stir in
apricots; simmer covered 5 minutes more. Sprinkle with walnuts.

Makes 4 servings, 355 calories each.
