Recipe - Chicken Adobo

4 5 ounce chicken breasts halves
skinned and boneless
2 lg Crushed cloves of garlic
1 md Onion, chopped
One half cup Rice vinegar
One fourth cup Low sodium soy sauce
2 Bay leaves
One fourth cup Water
1 teaspoon Sugar
1/8 teaspoon Fresh black pepper, ground
1. Rinse chicken pieces and place in large pot. Add all other remaining
ingredients, and pour over chicken to cover. Cover the pot and simmer
for 1 hour or until the chicken is very tender. Remove the bay leaves
and serve with a small amount of marinade.
Serves: 4 (3 oz. pieces of chicken each)
