Recipe - Cheesecake Bars

Categories: None, Cheesecake Bars
Ingredients:

5 tablespoon Margarine or butter;
softened
1/3 cup Brown sugar
1 cup Flour
1 One fourth cup Finely chopped walnuts
1 pack (8 oz.) cream cheese; light
or regular
One half cup Sugar
1 Egg
2 tablespoon Milk
1 tablespoon Lemon juice
One half teaspoon Vanilla

I made this last Saturday to take to a get together at church. It is very
good and very rich. Every one liked them. I got it out of the "QUICK "n
EASY" Home Cooking from April 1997

In a mixer bowl, cream together margarine and brown sugar until light and
fluffy. Beat in flour and nuts. Set aside 1 cup of this mixture.

Press remaining mixture into bottom of ungreased 8x8x2inch baking pan.
Bake in preheated 350 degree oven for 12 minutes.

Meanwhile, in medium mixing bowl, beat together cream cheese and sugar. Add
egg, milk, lemon juice and vanilla; beat well. Pour over baked layer in
baking pan. Sprinkle reserved flour mixture over top. Bake at 350 degrees
for 25 minutes. Cool; cut into bars. Store, covered, in the refrigerator.
Makes 23 dozen bars.

I doubled the recipe. I will make them again for special occasions.
