Three fourths cup Lowfat riotta cheese
Split and toasted
One fourth teaspoon Finely shredded lime peel
2 Kiwi fruit cut or sliced up or
2 teaspoon Lime juice
1 cup Sliced strawberries
1 tablespoon Sugar
Or peaches
1/8 teaspoon Ground nutmeg
* In a small bowl, combine riotta cheese, lime peel, lime juice, sugar, and
nutmeg. Spread cheese mixture evenly over toasted muffin halves. * Top
each muffin half with kiwi fruit slices, strawberry slices or peach slices.
