Recipe - Charred Pepper Skewers

1 lg Red pepper, deseeded and
chopped
1 lg Yellow pepper, deseeded and
chopped
1 Sweet onions, cut into
wedges
2 Courgettes, thickly cut or sliced up
2 tablespoon Olive oil
2 Cloves garlic, peeled and
crushed
Deseed and cut the peppers into pieces, then place in a bowl with the sweet
onion, cut into wedges and the thickly cut or sliced up courgettes. Stir in olive oil
and crushed garlic then toss well. Thread the ingredients onto skewers, and
cook on the barbecue for 1015 minutes or until the vegetables are just
tender.
