Recipe - Chargrilled Vegetables

2 Potatoes; up to 3
2 Courgettes
2 Sweetcorn
1 Aubergine
8 Baby onions; up to 10
1 Yellow pepper
1 Red pepper
1 Green pepper
1 Bulb garlic cut in half
One half Dsp olive oil
Black pepper
Cut the potatoes into slices One half inch thick, slice the courgettes
lengthways, cut each sweetcorn into five pieces and slice the
aubergines into rings. Lightly steam all these vegetables for 34
minutes to soften then pat dry.
Place them on a preheated grill pan sprinkled with oil along with the
onions, peppers and garlic. Cook for 46 minutes, turning once or
twice. Sprinkle occasionally with a little oil and black pepper.
Serve hot on a large platter.
