Recipe - Chantilly Potatoes

4 Whole potatoes quartered
3 tablespoon Margarine or less
One half cup Fatfree plain yogurt
One fourth cup Parmesan cheese grated
1/8 teaspoon Salt
1/8 teaspoon Black pepper
Preheat oven at 475. Prepare a 1 One half quart baking dish with cooking spray.
Boil potatoes until tender. Mash with margarine and One fourth cup yogurt. Season
with salt and pepper. Whip the remaining One fourth cup yogurt until stiff.
Spread mashed potatoes in a baking dish. Sprinkle with grated Parmesan
cheese. Bake until the cheese melts and the top is golden brown, about 20
minutes.
