Recipe - Chai Tea

MASALA SPICE MIX
1 Cinnamon stick 1.5 inch
3 Cardamom pods; up to 4
2 Black pepper corns; up to 3
2 Cloves; up to 3
One half teaspoon Ground ginger
TO ASSEMBLE
1 cup Water
1 teaspoon Sugar
1 teaspoon Darjeeling tea leaves
One fourth teaspoon Masala Spice Mix
One fourth cup Milk
1. Grind cinnamon stick, cardamom, black pepper corns, and cloves to a
powder. Stir in ground ginger.
2. Combine water, sugar, tea and One fourth teaspoon spice mix in a pan and bring
to a boil. Simmer for one minute.
3. Add milk, bring to a boil and simmer for 35 minutes.
4. Strain into a mug or teapot.
