Recipe - Cauliflower With Fresh Tomatoes And Basil

1 tablespoon Olive oil
4 Spring onions
675 g Ripe tomatoes, skinned,
deseeded and quartered
Salt and freshly ground
black pepper
2 tablespoon Fresh basil leaves, torn
1 lg Cauliflower, cut into
florets
Fresh basil, to garnish
1. Heat the oil in a pan and add the onions and tomatoes. Cook for 12
minutes.
2. Stir in the seasoning and basil and cook for 12 minutes. Meanwhile,
cook the cauliflower in boiling, salted water for 45 minutes until almost
tender. Drain well.
3. Arrange the vegetables on a serving plate and garnish with fresh basil.
NOTES : Jazz up cauliflower with the fresh flavours of tomatoes and basil.
One large cauliflower serves 8 as part of the meal Preparation: 25 mins
