Recipe - Cauliflower Casserole

1 md Cauliflower
One fourth cup Diced green pepper
1/3 cup Butter or margarine
One fourth cup Flour
1 teaspoon Salt
1 cn (2oz) cut or sliced up mushrooms
2 cup Milk
6 Sliced pimento cheese
Paprika
Separate cauliflower in medium pieces; cook covered in boiling, salted
water until tender (10 to 15 minutes). Drain. Brown green pepper lightly in
butter; blend in flour. Gradually stir in milk and cook, stirring
constantly until thickened; add salt and mushrooms. Place One half cauliflower
in 1One half quart casserole; cover with half the cheese and half the sauce.
Repeat layers; sprinkle with paprika. Bake in 350 degree oven about 15
minutes or until lightly browned. Serves 8.
