Recipe - Catfish Parmesan

2/3 cup Parmesan cheese; Grated
One fourth cup Allpurpose flour
One half teaspoon Salt
One fourth teaspoon Ground black pepper
1 teaspoon Paprika
One fourth cup Milk
5 Catfish fillets; About 2
pounds (up to 6)
1 Egg; Beaten
One fourth cup Butter; Melted
1. Combine the Parmesan cheese, flour, salt, pepper and paprika in a medium
sized bowl.
2. Combine the egg and milk in separate bowl, stirring well.
3. Dip fillets in egg mixture then dredge in flour mixture.
4. Arrange coated fillets in a lightly greased 13 x 9 x2inch baking dish.
5. Drizzle fillets with melted butter.
6. Bake at 350 degrees for 35 to 40 minutes, or until fish flakes easily
when tested with a fork.
