Recipe - Carrot Walnut Raisin Muffins

2 cup Whole wheat pastry flour
One half cup Unbleached flour
2 teaspoon Baking powder
One fourth teaspoon Salt
4 ounce Egg Beaters 99% real egg
product
1 cup 1% lowfat milk
1/3 cup Sunflower oil
One half cup Honey
1 One fourth cup Grated carrots
One half cup Chopped walnuts
One half cup Raisins
Preheat oven to 400.
Combine flours, baking powder, and salt in a mediumsized bowl. Mix
eggbeaters, milk, oil, and honey together. Combine wet and dry
ingredients.
Fold in carrots, walnuts, and raisins. Spoon approximately One half cup
mixture for each muffin into oiled muffin tins. Place immediately in oven.
Bake 20 minutes or until lightly browned on top. Serves 12. Nutrition (per
serving): 185 calories
