Recipe - Carrot Pudding Puff

One half cup Margarine, melted
One half cup Brown sugar
1 teaspoon Salt
1 tablespoon Lemon juice
1 One half teaspoon Vanilla
2 Egg yolks, beaten
1 One half cup Sifted flour
2 cup Cooked carrotsmashed
Or 2 lb.can drained and
Mashed
One half teaspoon Baking powder
One half teaspoon Baking soda
2 Egg whites, stiffly beaten
Combine all ingredients, folding the egg whites in last. Pour into a
1 One half or 2 quart greased casserole dish.
Bake at 350 for 1 hour.
