Recipe - Carrot Muffins

4 Carrots; grated
1 One half cup Milk
One fourth cup Orange juice
2 Eggs; beaten
2 cup Flour
2 cup Cornmeal
3 teaspoon Baking powder
3 tablespoon Sugar
1 teaspoon Salt
4 tablespoon Butter; melted
Preheat oven to 325 degrees. In large bowl combine carrots, milk, orange
juice and eggs. In separate bowl sift together the flour, cornmeal, baking
powder, sugar and salt. Slowly stir the flour mixture into the carrot
mixture. Add melted butter. Pour into greased muffin tins and bake for
2530 minutes
