Recipe - Carrot Jam

1 qt Carrots, raw; grated
2/3 cup Juice; orange
1/3 cup Orange peel; grated
3 cup Sugar
One half teaspoon Cloves or nutmeg; ground
One half teaspoon Allspice
One half teaspoon Cinnamon
Combine all ingredients in a large sauce pot. Bring slowly to a boil.
Reduce heat; and
simmer, stirriing constantly until thick. Pour hot into hot jars, leaving
1/4" headspace. Adjust caps. Process 10 minutes in a boiling water bath.
