Recipe - Carrot Bread

1 cup Shredded carrot
1 cup Sugar
Three fourths cup Oil
2 Eggs
1 One half cup Flour
1 teaspoon Baking soda
1 teaspoon Cinnamon
One half teaspoon Salt
One half cup Raisins; optional
One fourth cup Chopped nuts
Hear oven to 350* Grease (not oil) bottom only of 9x5 or 8x4 loaf pan. In
large bowl, blend first 4 ingredients. Add flour, b. soda, cinnamon, and
salt . Beat 1 minute at medium speed. Stir in nuts and raisins. Pour into
prepared pan. Bake 50 to 60 minutes untill a toothpick inserted comes out
clean. Remove from pan: cool completely.
If glaze is desired, combine One half cup powdered sugar, 1 tsp. grated lemon
peel and 1 Tbsp. lemon juice. Blend until smooth and drizzle over loaf.
