Recipe - Carob Cake

1 cup White flour
1 One fourth cup Whole wheat flour
1 teaspoon Baking soda
One fourth teaspoon Salt
One half cup Carob powder (or cocoa)
One half cup Sugar
One half cup Corn oil
Three fourths cup Water
1 One fourth cup Honey or maple syrup
1 tablespoon Cider vinegar
2 teaspoon Vanilla extract
Sift the flours together with baking soda, salt & carob. Stir in the sugar.
In a large mixing bowl, stir together oil, water, honey, vinegar & vanilla
until well blended. Add dry ingredients, mixing till well blended.
Lightly oil & flour 2 8inch cake pans. Divide batter equally between the
two pans & bake at 350F for 20 minutes, or until the cakes test done. Cool
for about 10 minutes then turn out onto wire racks to cool completely.
