Recipe - Caribbean Crab Cakes

One half pound Lump Crabmeat
One fourth cup Onion; minced
One fourth cup Red Pepper; minced
2 tablespoon Jerk Spice
2 teaspoon Honey
One half cup Mayonnaise
1 cup Fresh Bread Crumbs
3 tablespoon Butter
Sweet Lime Salsa; to serve
In a small bowl, mix all the ingredients except the salsa and the butter to
form 12 crabcakes. Cook the crabcakes in the butter, over moderate heat,
until golden brown on both sides. Serve with sweet lime salsa or other
sauce.
