Recipe - Caribban Style Banana Bread

One half cup Butter
One half cup Brown sugar
1 Egg, well beaten room temp.
One fourth cup Jamaican rum
1 teaspoon Vanilla
2 cup Flour
1 teaspoon Baking powder
One half teaspoon Salt
Three fourths teaspoon Nutmeg
1 One fourth cup Mashed very ripe bananas
One half cup Chopped walnuts
One half cup White seedless raisins
One half cup Shredded coconut
Cream butter and sugar. Beat in egg until light and fluffy. Stir in
rum and vanilla. Sift all dry ingredients together. Add to
buttersugar mixture, alternately with bananas, mixing well after
each addition. Fold in remaining ingredients. Pour into well buttered
and floured loaf pan. Bake in 350 oven for 1 hour and 15 minutes,
until bread shrinks from sides of pan. Cool 30 minutes then unmold.
Wrap tightly in foil. Serve at room temp. with plenty of sweet butter.
