Recipe - Canada War Cake

Categories: Cakes &, Frostings, Canada War Cake
Ingredients:

2 cup Brown or white sugar
2 cup Water
2/3 cup Lard or shortening
1 cup Raisins
One fourth teaspoon Salt
One half teaspoon Nutmeg
2 teaspoon Cinnamon
1 teaspoon Ground cloves
2 teaspoon Baking soda; mixed with
1/3 cup Cold coffee or water
4 cup Allpurpose flour; sifted
with
1 teaspoon Baking powder
1 cup Chopped nuts
Whole or half nuts; optional

Boil sugar, water, lard, raisins, salt and spices 5 minutes. Let cool, then
add baking soda and flour mixtures. Mix thoroughly (batter should be quite
stiff). Add chopped nuts. Pour into greased and floured rectangular or
square pans and decorate with nuts. Bake in preheated 350 °F oven 30 to 35
minutes or until a knife inserted in center comes out clean.

I usually omit the half or whole nuts and just lightly dust the top with
powdered sugar.
