Recipe - Calypso Couscous

1 One half cup Orange Juice
1 cup Water
1 pack (12oz) couscous
2 tablespoon Olive oil
1 Navel orange; peeled and
minced
2 Kiwi fruit; peeled and minced
2 teaspoon Lime juice
2 tablespoon Snipped fresh mint leaves
One fourth cup Pine nuts; lightly toasted

In a saucepan over mediumhigh heat, bring the orange juice and water to a
boil. Stir in the couscous and oil. Remove from the heat. Cover, let stand
for 30 minutes. In a large bowl, toss the couscous with the oranges, kiwi
fruit, lime juice, mint and pine nuts. Serve immediately or chill until
ready to serve.
