Recipe - Cajun Rice

1 Yellow onion, chopped
1 Green bell pepper, Chopped
1 bn Green onions, chopped
2 Garlic cloves, crushed
One half pound Mushroom, cleaned & Sliced
16 ounce Stewed tomatoes, * see Note
One fourth cup Green chiles, canned
1 teaspoon Chili powder
1 teaspoon Cajun spice mix, see
Directions
One fourth cup Fresh cilantro sprigs,
Chopped
2 ds Tabasco sauce
4 cup Brown rice, cooked, ** see
Preparation Time: 0:25 Saute the onion, green pepper, scallions, garlic,
and mushrooms in a small amount of water for 5 to 10 minutes. Add the
remaining ingredients (except for the rice) and mix well. Stir in the
cooked rice, heat through, and serve.
NOTE: Some Commerical Cajun spice mixes are now available. To make your own
Cajun spice mix, combine 3 tablespoons paprika, 2 teaspoons onion powder, 2
teaspoons ground black pepper, 2 teaspoons ground white pepper, 2 teaspoons
cayenne, 1 teaspoon ground dried oregano, 1 teaspoon ground dried thyme,
and One half teaspoon celery seed. Mix together and store in a tightly covered
container. Makes about 1/3 cup.
NOTES : I added 1 cooked link of turkey kielbasa, cut or sliced up and 1 cup
precooked, frozen shrimp. Tasted just like jambalaya!! Also used
Lusianne's Cajun Spice.
