Recipe - Cajun Pan Fried Bay Scallops

1 One fourth pound Bay scallops
2/3 cup Seasoned breadcrumbs
2 tablespoon Plus 2 tsp. oil
1 One fourth Green bell peppers; seeded
and chopped
2 Three fourths Scallions; chopped
11 ounce Mushrooms; cut or sliced up
One fourth teaspoon Garlic powder
Three fourths teaspoon Cajun seasoning
Three fourths Lime; cut in wedges
Prep: 10 min, Cook: 5 min.
Combine scallops and breadcrumbs in a sealable plastic bag. Shake to coat
scallops. Heat oil in a heavy nonstick skillet over medium heat. Add
scallops and remaining ingredients, except lime, and cook 57 minutes,
gently stirring occasionally, until scallops are opaque. Serve with lime
wedges.
