Recipe - Buttermilk Spice Muffins

2 One half cup Allpurpose flour
2 teaspoon Baking powder
One half teaspoon Baking soda
One half teaspoon Ground cinnamon
One fourth teaspoon Ground nutmeg
One fourth teaspoon Salt
1 cup Buttermilk
2 lg Eggs
One half cup Sugar
One half Stick unsalted butter or
margarine (not spread),
melted and cooled
1 teaspoon Vanila
1 tablespoon Sugar, topping
Heat oven to 375°. Spreay 12 regularsize muffin cups with nonstick cooking
spray or place 12 foil cupcakes liners on a cookie sheet.
In a 23 quart bowl, stir flour, baking powder, baking soda, spices and
salt until blended. Pour over flour mixture and stir just until mixed.
Spoon into muffin cups or foil cupcake liners. Sprinkle with the 1 tbsp
sugar. Bake 2530 minutes or until tops are lightly browned and muffins are
springy to the touch. Cool in pan 5 minutes before turning out onto wire
rack. Serve warm or room temperature.
