Recipe - Buttermilk Sherbet

1 cup Sugar
One half Envelope unflavored gelatin
One fourth cup Boiling water
1/8 teaspoon Salt
1 Egg white
2 cup Buttermilk
1 cn (Small) crushed pineapple
1 tablespoon Lemon juice
1 teaspoon Vanilla
Mix sugar, salt and gelatin; stir in boiling water, beating briskly. (If
gelatin is not dissolved, place on low heat and stir.) Cool and add
buttermilk, pineapple, lemon juice and vanilla. Pour into refrigerator tray
and freeze until firm. Turn into bowl and let stand while beating egg white
until stiff. Beat frozen mixture until smooth; fold in egg white. Return to
freezer tray. Freeze firm.
