Recipe - Buttermilk Apple Muffins

1 cup Brown sugar
1/3 cup Oil
1 Egg, beaten
1 teaspoon Vanilla
1 One half cup All purp flour
One half teaspoon Baking soda
One fourth teaspoon Salt
1 cup Apples, peel, chp
One half cup Buttermilk
One fourth cup Chopped walnuts
One half teaspoon Cinnamon
Preheat oven 325. Place paper liners in muffin tins. Blend Three fourths cup brown
sugar, oil, egg, and vanilla in lg bowl. Add flour, baking soda and salt.
Add apple and buttermilk and mix thoroughly. Divid among tins. Combine
remaining One fourth cup brown sugar, walnuts, and cinnamon in small bowl. Sprinkle
over batter. Bake until muffins are brown and test done, 3035 mins.
