Recipe - Brown Lentil Salad

1 pack Dried lentils; (12 oz)
1 Onion; minced
3 Cloves garlic; minced
4 cup Water
1 tablespoon Dried parsley
1 teaspoon Dried oregano
1 teaspoon Dried basil
One fourth cup Red wine vinegar
One half cup Oil
1 teaspoon Kosher salt
1. In a 2quart saucepan, combine lentils, onion, garlic, the water,
parsley, oregano, and basil. Bring to a boil. Reduce heat to simmer and
cook for
25 to 30 minutes. Pour into serving bowl to cool.
2. In a small bowl whisk vinegar, oil, and salt. Pour mixture over lentils
and mix well. Chill 1 hour.
