Recipe - Brochette Of Chicken

24 ounce Chicken breast, cut in 1"
cubes
One half bn Fresh parsley, finely
chopped
1 teaspoon Fresh garlic, minced
One half teaspoon Cumin
Salt and white pepper, to
taste
Three fourths cup Olive oil
2 dr Yellow food coloring
8 8" skewer sticks
Mix all ingredients well. On each skewer stick, put on 4 ounces of chicken.
Cook over a bed of hot coals on a barbecue pit or broil in oven until
tender, about five minutes.
