Recipe - Broccoli Souffle

3 tablespoon Butter
3 tablespoon Flour
1 cup Milk
One fourth teaspoon Salt
1/8 teaspoon Pepper
2 One half cup Grated cheese
1 pack (10oz) broccoli; chopped
One half cup Chopped onion
3 Eggs; separated
Make a white sauce with butter, flour, milk, salt and pepper. Add cheese.
Stir until melted. Fold in partially thawed broccoli and onion. Fold in
beaten egg yolks. Beat egg whites until stiff and fold into broccoli
mixture. Pour into a 2quart souffle dish. Set dish in shallow pan filled
with One half inch of water. Bake at 350 degrees for 1 hour, until puffy and
brown.
