Recipe - Broccoli Frittata

2 One half tablespoon Onion, chopped
1 pack Frozen chopped broccoli,
cooked and drained
2 One half tablespoon Parmesan cheese
One fourth cup Milk
One half cup Mozzarella, shredded
2 tablespoon Butter
1 small Garlic clove, crushed
1 cup Rice, cooked
2 Eggs, slightly beaten
One half teaspoon Salt
Pepper
Saute onion in butter until tender. Do not brown. Add broccoli, garlic,
rice and parmesan, mix well. Combine eggs, milk and seasonings. Stir into
rice mixture. Turn into wellbuttered shallow 1 quart casserole. Top with
mozzarella cheese. Bake at 350 degrees for 2025 minutes until set.
