Recipe - Boiled Navy Beans

1 pound Dried Navy beans; (2 cups)
2 teaspoon Sugar
1 teaspoon Salt
1 ds Pepper
7 cup Cold water
One fourth pound Salt pork
Pick over and wash beans thoroughly in cold water. Place beans in a 3 or
4quart saucepan, add remaining ingredients, cover and SIMMER for 2 One half to
3 hours until beans are tender but not mushy. Shake the pan occasionally to
prevent sticking. Edible cow peas and soy beans may be cooked in the same
manner. Makes about 6 cups.
These beans are delicious eaten as is, or may be used for making soup or
salad.
