Recipe - Boervors (Farmers Sausage)

10 pound Beef
5 pound Pork or mutton fat; (Sheep
tail).
2 tablespoon Coriander seed ground
One half Grated nutmeg
4 tablespoon Salt
2 tablespoon Ground cloves
2 tablespoon Allspice
2 tablespoon Pepper
2 tablespoon Chile powder or to taste *
* Added to the original recipe.
Mince beef and cut fat into small cubes. Mix all ingredients well. Cover
for one hour. Fill large size skins (casings) and tie ends.
