Recipe - Bob Hopes Lemon Pie

1 cup Sugar
2 tablespoon Sugar
3 tablespoon Cornstarch
1 cup Boiling water
2 tablespoon Butter
1 pn Salt
4 tablespoon Lemon juice
4 Egg yolks
Grated rind of 1 lemon
3 Egg whites
Baked pie shell
2 tablespoon Sugar
Combine cornstarch and sugar, add water slowly, stirring constantly,
until thick and smooth. Add slightly beaten egg yolks, butter, lemon
rind and juice and salt. Cook 23 minutes. Pour into baked shell.
Cover with meringue made from 3 egg whites, beaten stiff and 2 tbsp
sugar. Bake in slow oven 15 minutes until brown. From "A Taste of
