Recipe - Blue Corn Muffins

1 cup Allpurpose flour
1 cup Blue cornmeal
1 tablespoon Baking powder
1 4.5 ounce can chopped green
chiles; drained
Three fourths cup Shredded Monterey jack
cheese; divided
2 lg Eggs; lightly beaten
1 cup Milk
One fourth cup Butter or margarine; melted
2 tablespoon Honey
Vegetable cooking spray
Combine first 3 ingredients in a large bowl; stir in chiles and 1/2
cup cheese. Make a well in center of mixture. Set aside. Combine eggs
and next 3 ingredients; add to dry ingredients, stirring just until
moistened. Place paper baking cups in muffin pans, and coat with
cooking spray. Spoon batter into cups, filling three fourths full.
Sprinkle with remaining One fourth cup cheese. Bake at 400 ø F for 17
minutes or until golden. Remove from pans immediately.
