Recipe - Blue Cheese Stuffed Potatoes

4 md Baking potatoes; (about 1.5
lbs)
One half cup Sour cream
One half cup (1 oz) crumbled blue cheese
One fourth cup Milk
One fourth cup Butter or margarine; melted
One fourth teaspoon Salt
1/8 teaspoon Pepper
Place bacon slices on a rack in an 11x7x1.5 inch baking dish; cover
with paper towels. Microwave on HIGH for 3.54.5 minutes or until crisp.
Drain and crumble; set aside.
Scrub potatoes; prick several times with a fork. Place potaotes 1 inch
apart on a microwavesafe rack or paper towels. Microwave on HIGH 1013
minutes, turning and rearranging once; let stand 2 minutes. Cut a 1inch
lengthwise strip from the top of each potato. Carefully scoop out potato
pulp, leaving a 1/4inch shell intact; mash pulp. Combine potato pulp, sour
cream, and next 5 ingredients. Spoon potato mixture into shells. Place on a
microwavesafe plate. Microwave on HIGH 2 minutes or until thoroughly
heated. Sprinkle with crumbled bacon. Yield: 4 servings
