Recipe - Blender Gazpacho

One half Green pepper
3 Tomatoes
1 One half Cucumbers or medium zucchini
One half cup Cold vegetable stock or
water
3 tablespoon Rice vinegar
One half teaspoon Chili pepper
2 tablespoon Vegetable oil
1 teaspoon Bragg's Liquid Aminos
(this unfermented soy
product, a salt replacer,
is available in health
food stores)
Slice or quarter vegetables, setting aside half a cucumber or
zucchini for garnish. Put into blender and blend 3 seconds or until
cucumber is shredded.
Mix all ingredients in a bowl and refrigerate until serving time.
Finely chop onehalf cucumber or zucchini for garnish.
Makes 6 as a side dish or 4 as a main dish.
