Recipe - Black Bean With Peppers And Cumin Vinaigrette

1 One fourth cup Dried black beans, soaked
4 cup Water
1 Bay leaf
One half teaspoon Salt
1 tablespoon Red wine vinegar
1 Clove garlic, minced
One fourth teaspoon Cumin
1 teaspoon Hot pepper sauce
1 tablespoon Chopped cilantro
2 tablespoon Olive oil
One half Red pepper, minced
One half Yellow pepper, minced
One half Green pepper, minced
1 Red onion, minced
4 Scallion, thinly cut or sliced up
Drain beans & rinse well. Put in a large pot with the water & bay leaf.
Bring to a boil & simmer for 1 to 1 One half hours. Drain.
Combine salt, vinegar, garlic, cumin, hot pepper sauce, cilantro & olive
oil in a small bowl. Pour over warm beans. Toss well. Add reemaining
ingredients. Toss gently, garnish with fresh cilantro & serve at room
temperature.
