Recipe - Black Bean And Corn Salsa
Categories: None, Black Bean And Corn Salsa
1 cn Black beans, drained and
rinsed (can use othet
types, I like black eyed
peas also) (up to 2)
1 cn Mexicali corn or regular
corn kernels
1 Jar your favorite salsa
Fresh cilantro
Fresh lime
Cumin
Drain and rinse corn and beans and combine. Add about 1 cup of salsa, more
or less depending on how runny you like it. Mix in about 2 tablespoons of
chopped cilantro, juice of one lime, and probably a teaspoon of cumin.
Chill, and eat as a side dish, or use as a dip with baked chips. This is
always a hit, and the spices and ratios can be adapted to whatever you have
on hand. you can also had some chopped onion or green pepper, or some
jalapenos if you like.
