Recipe - Black Bean Salad (Ff)

Ingredients:

1 cn Black beans
1 cn Black eyed peas
2 Scallion
1 Red bell pepper
One half Green bell pepper
1 cup Chopped parsley
1 Clove garlic

DRESSING
One half cup Olive oil
3 tablespoon Balsamic vinegar
2 tablespoon Dijon mustard
Salt & black pepper

Dressing: Mix together in a small jar the olive oil, vinegar,
mustard, salt & pepper. Put on tightfitting lid & shake to mix well.
Salad: In large salad, mix together black beans, black eyed peas,
scallions, red bell pepper, green bell pepper, parsley & garlic. Pour
dressing over all & toss well. (you can chill before serving or serve
at room temp.)

Approximately 48 minutes.
