Recipe - Black Bean Roll-Ups

1 One half tablespoon Olive oil
One half cup Onion, finely minced
1 Clove garlic, minced
1 cn Black beans, drained (15oz)
Salt and pepper to taste
4 Flour tortillas
One half cup Jack cheese, shredded,
Jalapeno flavored
1 Recipe: Tomatillo guacamole
Heat oil in large skillet. Add onion and garlic and saute until onion is
tender, about 5 minutes. Add beans. Season to taste with salt and pepper.
Cook and stir mixture over low heat, while mashing. When hot and pulpy,
remove beans from heat. Spread One fourth of mixture on each of 4 tortillas. Top
each with 2 tbs. shredded cheese. Arrange tortillas on baking sheet. Bake
at 350 F. until cheese melts, about 5 minutes. To serve, top each tortilla
with One fourth of Tomatillo guacamole and roll up tortillas and serve.
