Recipe - Black Bean Chili Salad

One fourth cup Red wine vinegar
2 tablespoon Vegetable oil
One half teaspoon Chili powder
One fourth teaspoon Ground cumin
1 Clove garlic; crushed
1 cup Frozen whole kernel corn;
thawed and drained
1 cup Jicima; minced
Three fourths cup Tomato; seeded and chopped
2 Green onions; cut or sliced up
One fourth cup Fresh cilantro; chopped
2 cn Black beans; cooked, rinsed
and drained
Combine vinegar, oil, seasonings and garlic in a large glass or plastic
bowl. Stir in remaining ingredients.
