Recipe - Black Bean Casserole Ole

1 tablespoon Olive oil
1 cup Onions; chopped
Three fourths cup Cornmeal, yellow, + 2 tbs
2 teaspoon Chili powder
1 Three fourths cup Soymilk, lite
1 pound Beans, black, canned; rinsed
and drained
1 pound Corn, whole kernel, canned;
drained
1 pound Tomatoes, stewed, canned
4 ounce Chilies, green, canned;
chopped
One fourth cup Nutritional yeast cheesy
sauce
Preheat oven to 350.
Lightly oil an 8inch square baking pan or spray with a nonstick cooking
spray.
In a large bowl, combine all ingredients, except cheesy sauce. Mix well.
Place in prepared pan. Drop cheesy sauce on top by spoonfuls.
Bake, uncovered, 45 minutes.
