Recipe - Black Bean Burgers

3 cn Black beans; rinsed and
drained
2/3 cup Onion; finely chopped
One fourth cup Red bell pepper; finely
chopped
1 tablespoon Jalapeno pepper; finely
chopped
1 teaspoon Ground cumin
3 tablespoon Sesame seeds; roasted
1 tablespoon Lime juice
1 teaspoon Salt
One half teaspoon Peppr
2 tablespoon Vegetable oil
In large bowl, mash beans until most are smooth, leaving some intact. Add
onion, bell pepper, jalapeno pepper, cumin, sesame seeds, lime juice, salt
and pepper; mix well. Divide mixture into 8 equal patties about 31/2
inches in diameter. In large heavy frypan, heat oil over mediumlow heat.
Cook patties, in batches, for 810 minutes or until lightly browned, tuning
once and adding more oil if necessary. Carefully remove burgers from frypan
to platter and tent with foil. Let stand 5 minutes before serving.
Makes 8 burgers.
