Cooking spray
Cornmeal for dusting
1 15 ounce can black beans;
rinsed & drained
One half cup Brown rice; cooked
One half cup Fresh corn kernels
One half cup Sunflower seeds; coarsely
ground
One fourth cup Cornmeal
One fourth cup Wheat germ
One half cup Chopped celery
1 tablespoon Oil
One half cup Salsa
1 tablespoon Chili powder
1 tablespoon Chopped cilantro
1. Preheat oven to 375. Pan spray a 14x16inch cookie sheet and dust
with cornmeal. 2. In a large bowl, combine all ingredients and mix
thoroughly. Let stand for 15 minutes. 3. On a piece of wax paper or
foil, shape One fourth of the mixture into a thin, 6inch patty. Pick up wax
paper and flip patty onto baking sheet. Repeat with remaining
mixture. Bake for 35 minutes, or until brown and firm. To serve, cut
in half.
Top with salsa, avocado, and sprigs of cilantro.
