Recipe - Bigfoot Granola Bars

Ingredients:

7 cup Rolled oats
1 cup Coconut
1 teaspoon Salt
1 cup Wheat germ
5/8 cup Brown sugar
One fourth cup Sunflower seeds; (optional)
One half cup Chopped nuts; (optional)
One fourth cup Sesame seed; (optional)
One half cup Oil
One half cup Water
1 One half teaspoon Vanilla
2 Cubes margarine
1 pound Marshmallows
One half cup Honey
1 cup Peanut butter
Chocolate or butterscotch
chips; (optional)

Combine rolled oats, coconut, salt, wheat germ and brown sugar. Also can
mix optional ingredients of sunflower seeds, chopped nuts and sesame seed.
Mix and add to this mixture oil, water and vanilla; mix until smooth. Place
in ungreased pan (large roasting pan, etc., so you can stir it
periodically). Bake at 225 degrees until golden brown, approximately 2 to 3
hours. Leave oven door open a crack to let moisture out. In saucepan, heat
2 cubes margarine and 1 pound marshmallows until melted. Add honey and
peanut butter. When melted (I usually do in double boiler), pour over
granola mix and pour into 9 x 12inch greased pan. Cool and cut into
squares. Good for hiking and camping snacks. Also add chocolate or
butterscotch chips for a different flavor.
