Recipe - Bess Fergusons Apple Muffins

One fourth cup Shortening
One half cup Sugar
1 Egg
One fourth teaspoon Vanilla
1 One fourth cup Sifted all purpose flour
3 teaspoon Baking powder
One half teaspoon Salt
One fourth teaspoon Cinnamon
One half cup Milk
1 cup Chopped apple; or more
Cream shortening, sugar, egg and vanilla until light and fluffy. Shift
flour, baking powder, salt and cinnamon together. Add to butter mixture
with milk. Beat until smooth. Stir in chopped apple, with peel on. Bake
about 20 min. at 400 degrees. (Makes 12 muffins.)
